I have not been able to stop eating this eggplant dish!
It is really simple and really beautiful.
You need:
1-2 eggplant - cut up into small chunks and stir fried with sesame oil
Create a sauce by mixing:
2 tbsp of miso paste
1 tsp sugar
2 tbsp mirin
2 tbsp soy sauce
1 chilli
and
1 tbsp of sesame oil
Once the eggplant is cooked add the sauce and let it sit for around 10 minutes.
Enjoy!!
