Meat orders are now open, and first on offer are our regenerative lamb and beef packs. Prices and delivery dates are listed below. Autumn Lamb Small Lamb pack: 3-4kg Small packs contain 1 roast, cutlets, chops or steaks, and lamb sausages and mince. $80 (Approximately 2 loaves of bread in freezer space required) Medium Lamb Pack: 6-8kg Medium packs contain 1 whole shoulder, 1 rack or cutlets, loin chops, rump steaks, 2 shanks, 1 leg roast and sausages and mince. $155 (Approximately 4 loaves of bread in freezer space required) Large Lamb pack: 14-18+kg Large packs contain 2 whole shoulders, rack or cutlets, loin chops, rump steaks, 2 legs of lamb, 4 shanks, neck chops and sausages and mince. $300 (Approximately 8 loaves of bread in freezer space required) Regenerative Beef The feedback from our Summer BBQ Beef packs has been awesome. Our customers loved the beef, and have been honouring the great work that our steers have been doing regenerating the land, with their enjoyment of the meat. Our herd of Jersey, Friesian, Shorthorn and Australian Red steers have become the largest converters of grass to meat and manure of all the animals in our holistic system, and have been transforming the pasture and banking carbon wherever they graze. Our regenerative beef packs contain a unique combination of both primary and secondary cuts, as well as mince, sausages, roasts and corned meats. Our packs are assembled to replicate the percentages of primary and secondary cuts available in the whole animal. For example, primary cuts such as scotch, ribeye, porter house, sirloin, t-bone and tenderloin account for approximately 10-15% of the whole animal. We include approximately 50-60% of secondary cuts such as chuck, brisket, shin, and blade. The remainder of our packs are made up of corned cuts, premium mince, and Thornton butchers famous beef sausages. Small pack: 5kg = $100 Medium pack: 10kg = $200 Large pack: 15kg = $300
