Pumpkin Hummus


This recipe came with my CERES box (originally from Arthur St Kitchen Community Cookbook) a few weeks back and it was so delicious that I feel like I need to share it!!!


Ingredients:

750g diced pumpkin
2 tbsp tahini
1 garlic clove
1 tsp salt
1-2 tbsp of oil
1 tsp cumin
1 tbsp lemon juice
2 tbsp natural yoghurt
salt and pepper

Method:

Place diced pumpkin in a saucepan with a splash of water and salt, cook on a medium heat for about 15 minutes. Keep your eye on it and make sure the liquid doesn't evaporate and also make sure that the pumpkin isn't swimming in water. It's done when the pumpkin is soft and easily falls apart.

Leave it to cool.

Combine all the rest of the ingredients with a whisk or an electric beater.

It's really beautiful and surprisingly sweet!
